Lemon Blueberry Buttermilk Waffles




The lemon hype has been so real lately and I’m not going to lie that I had a hard time trying to navigate this lemon flavor. 


After weeks of experimenting with Core Perform’s Vegan Lemon Protein Powder I found the perfect flavor combination to share with you all to soak in the last few weeks of Summer and the beginning of National Waffle Week (my personal favorite). 


Lemon Blueberry Buttermilk is ultimately where it’s at when it comes to the ideal flavor combination. These waffles have over 65g of protein and are the perfect refreshing post workout weekend grub if you ask me. 



 

You’ll need:





(Optional):

  • Toppings of Choice (Some Suggestions are the Following)

    • Greek Yogurt 

    • Fresh Fruit 

    • Whipped Cream

    • Laughing Cow Creamy Swiss Cheese

    • Cottage Cheese 

 

To (K)reate this masterpiece, you’ll want to begin by taking a medium sized mixing bowl and adding the dry ingredients of the protein pancake mix, collagen powder, protein powder, and cinnamon. 


Once you pour those into the bowl, you'll add the baking powder and pour the liquid egg whites directly on top of the baking powder to help create the fluffiness. Slowly add water as you whisk the batter together until you reach desired consistency. 


Once the batter is whisked together, take a spoon and stir in the blueberries slowly.  Let the batter rise for a few moments while you heat up your waffle maker. I swear by the Dash waffle makers. They are affordable, convenient, and the perfect size for any apartment/home. They come in so many fun shapes and are super easy to travel with as well. (You can find them on their website, Amazon, QVC, Target, Kohls etc.) 


The waffle makers also do the heavy lifting for you and the light function is key for knowing when your waffles are done. 


You may benefit by giving the waffle makers a little spritz of cooking spray to avoid the waffles from sticking. 


Once the waffles are finished you can top the protein packed deliciousness with your favorite toppings. I really love using Greek yogurt, cinnamon, berries, whipped cream, cottage cheese etc., to make a more fulfilling and satisfying meal.
