Blueberry Chocolate Protein Pancakes



If you’ve followed me or know me by even the smallest amount, you know I LOVE pancakes. I, no shame, eat protein pancakes/waffles pretty much daily because I enjoy it. There are so many different variations you can come up with that include different nutrients, and it helps me reach my macro goals because of how customizable the ingredients are. 

 

Now. I tend to spend most of my time making my own protein pancakes or oatmeal pancakes/waffle recipes, but I am also a SUCKER for IHOP! Brings me back to my childhood days. So, when I heard Ihop did a collaboration with Be Amazing for pancake flavored protein powder. I had to buy and I am OBSESSED. 

 

This recipe has to be one of my newfound favorites. I really love the flavor of the blueberry protein powder combined with fresh blueberries cooked in. I turned it into chocolate blueberry by adding cacao powder for the enhanced nutrients that come from the cacao. If you didn’t know cacao is rich in antioxidants and minerals. One serving of cacao powder has 5-6g of fiber, around 300 mg of potassium and 106 mg of magnesium! I’m all about adding nutrition to your favorite foods instead of eliminating them from your diet. 

 

If you don’t have cacao on hand, you can substitute it with cocoa powder for a chocolate taste as well. I tend to either buy the unsweetened navitas organics brand or recently have been super into the unsweetened organic cacao powder from Trader Joe’s because it is MUCH cheaper there. 





 

You’ll need:

 

I absolutely love starting off my recipes by measuring my dry ingredients of protein pancake mix, cacao powder, and protein powder into a bowl. Once you pour those into the bowl, you'll add the baking powder and pour the liquid egg whites + vanilla extract directly on top of the baking powder to help create the fluffiness. Slowly add water as you whisk the batter together until you reach desired consistency. 

 

Once the batter is whisked together, you can slowly stir in your blueberries to the batter. Let the batter rise for a few moments while you heat up your griddle! You may benefit by giving the griddle a little spritz of cooking spray to avoid the griddle from sticking. I love using the Dash griddle or a fun shaped pancake one. It definitely makes it more festive and enjoyable especially if you're making these for families, events, or large groups of people. 

 

Once the pancakes are finished you can add your favorite toppings. I really love using Greek yogurt, , whipped cream, cottage cheese etc., to make a more fulfilling and satisfying meal. You can tell I love dairy ha-ha, but there’s no limit on what you can do when it comes to toppings. That’s the beauty of toppings, and pancakes are so customizable to what one desires at the moment. 

 

I hope you find this recipe as delicious as I do. It definitely inspired me to try new flavors, test new products, and continue to make new recipes utilizing my favorite products. There’s no shame in having a million pancake recipes, there’s no shame in eating pancakes every day, and there is no shame in making this one multiple time a week because it is such a nutrient dense powerhouse recipe.
