Allergy Friendly Vanilla Berry Mini Muffins



One of my favorite things to do as someone who lives by themselves and is on a graduate school student budget is buy healthy product mixes that I can create into my own. It’s not always feasible to have every single baking ingredient in my apartment.


For starters, baking products do eventually go bad. I am only one human and it’s very difficult to sometimes carve out the money/desire to bake a large batch of something to only have one. And honestly, I moved to Georgia with absolutely nothing so I’m still slowly building my pan options to even begin baking certain things.


With all, I have begun to get back into the swing of baking though and have sincerely enjoyed bringing goodies to co-workers, friends, and staff here. I know complete homemade goodies will be coming soon as I finally bought some whole wheat flour, a high-quality muffin pans, and the holidays are right around the corner.


But there is value in using a mix AND still making it your own. It provides convenience and ease while maintain creativity.


I am so grateful for the evolution of baking mixes nowadays and am obsessed with GoNanas as a heathy allergy friendly alternative. Rather than following the bag instructions though... I turn the mix into a recipe of my own.


Recently, GoNanas partnered up with food blogger and recipe creator Rachel Mansfield to craft a mini banana blueberry muffin flavor alongside a mini muffin pan. The pan is adorable and, yes, I absolutely convinced myself to make the purchase of this flavor for the bonus of not only the mix but also a pan I desperately needed as well! I love the mini sized muffins for a quick energy boost, snack pairing, or as a pre-workout snack. I’ve been loving having one of these muffins with a protein shake and coffee in the morning to start my day off on a good note. 





I recently triple batched this recipe for my RA’s and fellow co-workers and they’ve been dying for more.


Their feedback means everything and is definitely giving me confidence into pursuing more recipes heading into the spring.

 

You’ll need:

- 3 Bananas

- 2 tbsp of a Vanilla Protein Shake (I used Iconic Protein). You can substitute with milk.

- 2 tbsp Vanilla Greek Yogurt

- 1 tsp Vanilla Extract

- 1 tsp Cinnamon Powder


Preheat your oven to 350 degrees before starting and prep a muffin tray of 12 or a mini muffin pan. You can spray, if necessary, use a non-sticking pan or add cupcake liners to the tray.


I always like to start by grabbing a mini bowl (like a plastic cereal bowl) and mashing the bananas. Since this recipe calls for 3 bananas, I do recommend mashing one banana at a time instead of throwing it all into one bowl to mash at once. Riper bananas are prime for baking, but it's also okay if they aren’t perfectly browning. If you need more assistance with mashing bananas, you can slice the banana before tossing it into a bowl to mash.


Next up, grab your medium mixing bowl and add the 3 mashed bananas, 1 tsp of cinnamon powder, 2 tbsp of Greek yogurt (I use the Two Good Yogurt), 2 tbsp of vanilla protein shake, 1 tsp of vanilla extract and your 2 tbsp of Oat Haus Vanilla Granola Butter.


The mix does already contain brown sugar in it, and the granola butter has some natural sugars with the maple syrup. However, if you need it to be sweeter you can add more granola butter or some maple syrup into the batter.



Once you whisk those ingredients to smooth, then add in your GoNanas Mini blueberry banana bread mix and continue whisking the batter until smooth.


Pour the batter in your muffin pan and bake for 15 to 20 minutes. Let cool before removing from the pan.


If you want to make the treat a bit fancier but keep it healthy for some holiday festivities. You can make whisk together some Greek yogurt and protein powder to place on-top of the muffins or keep on the side as a dip.

 

These muffins should be kept refridgerated due to the lack of preservatives in the mix and sweetner. Additionally, the added Greek yogurt and lactose free protein shake should also encourage refridgeration. You can also freeze them as well for meal prep purposes.
