2 Parfait Recipes to make this Holiday Weekend

Holiday summer weekends are essential for good snacks, tasty desserts and a fabulous barbecue buffet.

One of my favorite desserts or even a festive holiday themed breakfast to make is a parfait. Homemade parfaits are a great healthier option to start or end your day on the right note. I love how festive you can get with them and summer is the perfect time to add-in tasty fruits before they go out-of-season.

Strawberry Oat Parfait

This first recipe is perfect for a holiday breakfast, but I have recently been turned onto overnight oats for a late-night snack. I also swear I sleep better when I eat oats or oatmeal pancakes before bed. Take this as your reminder that carbs at night are certainly not a negative thing.

I will wholeheartedly say that I opt for convenience on the side of overnight oats and pretty much never make my own. I can typically be found hitting up the Mush sales whenever I see one at a grocery store near me. When I first started eating Mush overnight oats, I could only find them in Whole Foods. This past year I have seen them everywhere: Whole Foods, Target, Publix, Shoprite, Stop n Shop etc.,

To start off making your parfait grab a fancy glass to amp up the apparence. Mason jars, clear glasses or even a fancy wine cup are great cups to build your parfait in.

The first layer of your glass should feature some fresh strawberries.

On top of the first layer of strawberries add the strawberry Mush overnight oats and pat it down in the glass. Next, top the oats with your greek yogurt of choice. I suggest using vanilla, blueberry, mixed berry or strawberry flavored greek yogurt. You cannot go wrong with the oats and greek yogurt combination.

I mention this a million times, but my go-to brand is Two Good Yogurt. I love the fact it's low in-sugar, contains no added sugars, and utilizes limited artificial flavors. Plus, you get a boost of protein from it! I also swear its the tastiest Greek yogurt I've ever had. There was definitely a time in my life where I averaged three a day.

Now, layer the glass with more fresh strawberries until you fill the top! You can never go wrong with fresh strawberries! On top of the final layer of strawberries place a dollop of whipped cream for the finish.

Protein Packed Yogurt Parfait

This recipe is super customizable to your preferred cereal preferences, but in this specific recipe I choose to use Three Wishes cereal. Three Wishes cereal is made from chickpeas and I enjoy the plant-based protein that comes from this cereal.

Layer the bottom level of the glass with the greek yogurt. I like to use the strawberry flavor for additional taste with this recipe. On top of the yogurt, add your first layer of fresh strawberries. Next, add your first layer of cereal before topping the cereal with another layer of strawberries.

Load up more strawberries to fill the top of the cup and then top it off with a dollop of whipped cream. This recipe is super easy to make, and also a great healthy snack option for kids after school!
